The Yamaguchi’s local cuisine, “Kawara Soba,” was born at Takase in 1962.
Inspired by the stories of people using tiles to grill wild grass and meat during wartime, Takase’s founder, Shinichi Takase, developed an original method.
The Kawara Soba features fragrant green tea soba topped with beef, Kinshi tamago (egg), seaweed, grated daikon radish and lemon, served with Takase’s original noodle soup base, and it became popular quickly after he started serving it.
